Baking muffin is somehow addictive for me. The more muffins I baked, the more I wish to bake. In this installment, I am going to share a recipe that I newly discovered.

Interestingly, a muffin that is baked in small portion is a type of bread. What I love about muffin is they usually are not as sweet as cupcakes, more dense (more flour) and contains 'healthy' stuff (usually fruits like banana, blueberry and strawberry) instead of frosting top. Another great advantage of muffin is easier to prepare compares to cupcakes. I can even make without a mixer! Practically, I do not have to beat at all. Fantastic, isn't it?

Exploring a new recipe is fun, let's get started.

Ingredients (makes 10 ~ 12 muffins)
2 large bananas - ripe
2/3 cup brown sugar
2 large eggs - lightly beaten
6 tbsp butter - melted
2 cup all-purpose flour
2 tsp baking soda
1/4 cup milk
2/3 cup semi-sweet chocolate chip (I use Chocolate flavored Baking Morsels)
1/2 cup walnuts - chopped

Method
1. Preheat oven to 350 degree Fahrenheit.
2. Grab a medium bowl and mash the bananas.

3. Combine sugar and whisked egg. Stir well.
4. Pour in melted butter and stir.

5. Sift flour and baking soda. Add milk. Use spatula and fold or stir gently.
Muffin's Batter
6. Stir in chocolate chips and walnuts.
7. Spoon the batter into the paper cup about two-third full each.
Muffin batter is ready for oven
8. Bake for about 20 - 25 minutes or until the muffins turn brown and the toothpick comes out clean.
Looks great and tastes awesome! I am going to have one more!
