The 'Pizza with Baked Salmon and Avocado' recipe was inspired by a cooking show on TV which I watched during my gym session a few months ago. However, the chef in the cooking show used a ready-made pizza crust to prepare more or less the similar pizza. I somehow choose to be different by preparing my own pastry sheet at home. In this way, I would learn from scratch on how pizza is made. Yes, it is time saving to just buy but again, the culinary arts is about experimenting almost everything by oneself which I would call that 'satisfaction'!
The pastry recipe is pretty simple and adopted from my Chicken Puff or Chicken Cornish recipe. Corn flour is added to add crispness for this thin crust pizza.
 The whole process is not complicated. It takes less than 30 min to prepare and another 20 minutes to bake. It is even better if you have some left-over meat/beef/chicken stew. Just exchange that with salmon in the following recipe.
Exploring a new recipe is fun, let's see what happen in my cooking laboratory.
Ingredients To make pizza crust/pastry (makes 4" X 8" pizza) 1/2 cup all-purpose flour 1/8 cup oil - I used vegetable oil 1/8 cup water 2 tsp corn flour 1/2 tsp salt 1/2 tsp sugar 1/2 tsp baking powder
Toppings 1/2 pound salmon 2 tbsp honey BBQ sauce 1/8 cup red onion - diced small 1/8 cup green pepper - diced small 1/4 cup Italian-mixed grated cheese 1/4 cup avocado - sliced 1/8 cup fresh olive (optional)
Method Direction to bake salmon: 1. Season with salt, pepper, teriyaki sauce. 2. Bake for 12 minutes at 375 degree Fahrenheit. 3. Shred with spoon and fork.
Direction to prepare pastry & pizza: 1. Preheat oven at 400 degree Fahrenheit. 2. Grab a medium size bowl. Combine flour, add salt, sugar and baking powder and mix. 3. Pour in water and oil and use spatula to mix. 4. Knead the dough for a couple of minutes. 5. Make into a ball and roll the dough flat and thin of a rectangular sheet.
 6. Baste with BBQ sauce evenly on the crust.
 7. Top up next layer with grated cheese.
 8. Sprinkle onion, green pepper, avocado, salmon and last layer with a bit of grated cheese.


 9. Bake for 20-22 minutes or until the pastry is golden.
