Sesame Oil Ginger Chicken. Oh..we love this dish. Both my Significant Other and I always talk about this dish every time we smell the aroma of sesame oil cooking from our neighbor.
 In fact sesame oil ginger chicken is sort of a popular dish prepared during confinement. Ginger is well-known for its characteristic to expel wind and therefore, post-natal mothers would consume a lot of ginger based dishes to get rid of wind in their guts. Research shares ginger does provide some medicinal properties including decreasing pain from arthritis, treating nausea and lowering cholesterol owing its blood thinning properties. A word of caution, ginger is contraindicated in people suffering from gallstones as it promotes the production of bile. We somehow love it because it is cooked with the aromatic sesame oil!
Recalling some tips provided by my mom, I think I have sufficient ingredients to start.
 Ingredients 1 tbsp sesame oil (I use Lee Kum Kee brand) 2 thumb size ginger - finely sliced
To marinate 1/2 chicken - sliced boneless brisket 1 tbsp oyster flavored sauce (optional) 1 tbsp light soy sauce 2 tbsp sweet soy sauce (I use ABC brand)
Method 1. Marinate with oyster sauce, light soy sauce and sweet soy sauce for at least an hour. 2. Get a medium size saucepan and heat up. Pour the sesame oil and once the saucepan is heated, place ginger.
 Saute or stir fry until fragrant whereby the sliced ginger would curl and turn brown.
 3. Put in the marinated chicken and stir well. Add a little water to let some part of the chicken immersed in the gravy. Bring it to boil. 4. Turn to medium. Simmer until the gravy becomes thicker.
 5. Serve warm.
