There are several variations on how to cook a platter of stir-fried bean sprouts. Despite it is a simple dish, the overcooked bean sprouts do not taste as good as the optimum tossed bean sprouts which are fresh and crunchy. Some cooks even go to the extend to only scald it so that the sprouts would retain its water content.

Everyone in our family love bean sprouts so we sort of grow up eating bean sprout day in day out. This is just one of my mom variations, prepared with shrimps, carrot, green pepper, tofu (medium-hard) and some green onion for garnishing.
Stir-fried bean sprouts

Ingredients
1/3 pound bean sprouts
1/4 cup carrot - julienned
1/4 green pepper - julienned
1/4 tofu - medium hard - sliced
10 pieces large shrimps - de-shelled
1/4 cup green onions - sliced
1 tsp cooking oil
1 tsp garlic - minced
Season with salt and white pepper
Ingredients for stir-fried bean sprouts
Method
1. Heat up a wok and pour cooking oil.
2. Add garlic and saute until fragrant.
3. Place shrimps into the wok and toss until cooked. Remove the shrimps and set aside.
4. Add tofu and stir fried until 80% cooked. Then, add carrot and allow it to partial cook.
5. Add green pepper and toss for a couple minutes.
6. Put in bean sprouts and toss for 2-3 minutes. Quickly add shrimps and toss briefly.
7. Add salt and pepper to taste.
8. Serve hot with steamed rice.
