'Koay Teow Th'ng' is a clear broth with flat noodles that made of rice flour (looks like Fettuccine) usually topped with fish balls, shredded chicken, minced pork and garnished with spring onion. It is one of the Penangite's staple food as it is commonly found at most Chinese coffee shops but it can be hard to get a good one though.
 If you are heading to work in Bayan Lepas and thinking of having a nice bowl of Koay Teow Th'ng (Flat Noodle Soup) for breakfast, then look for Sri Nibong Cafe. Starting as early as 6:30 am to accommodate for early shift workers, Instant Cooke Sai Tou Fish Ball Koay Teow Th'ng is one of the most popular stalls operating at this cafe or Chinese style coffee shop.
The Sai Tou Fish Ball Koay Teow Th'ng ('Sai Tou' is wolf herring fish that makes nice fish balls) served at Sri Nbong Cafe is instantly cooked based on customer's order. Beside Koay Teow, they also serve rice stick noodles (known as 'bee hoon' among locals), yellow noodles or locally called as 'mee' and instant noodles that is usually ordered as 'Maggi' which was named after the famous brand of local instant noodles! With a few cooks and at least 4 assistants on alternating shifts, the folks operating this stall never have a chance to sit or stand still from the moment the stall starts operation until they run out of raw material which indicates it is about time to wrap up and call it a day.
 I am never a big fan of Koay Teow Th'ng as I would only take it when I was not feeling well but when I visit Sri Nibong Cafe, this rule somehow does not apply. Instead I will order my favorite 'Bee Hoon Koay Teow Th'ng'. Comparing to other Koay Teow Th'ng shops or stalls, the broth served here is so much tastier unlike the usual plain one found elsewhere. A well cooked broth as soup and when add in the noodles, it simply tastes great, partly contributed by the lark I guess (warning: high cholesterol), marinated minced pork and egg.
To avoid long waiting time, come early for breakfast at non-peak hour so that Koay Teow Th'ng (Flat Noodle Soup) will arrive before your tummy starts growling!
