Sin Ban Heng is the name given for her famous prawn fritter business. If it was not pointed out by the stall owner herself, I would not realise there is a small signboard of 'Sin Ban Heng' as stated in Chinese characters. The lady owner was very bubbly and happy to elaborate when I told her that I was going to publicize her prawn fritters. Operating daily from 12pm to 5pm since 16 years ago, her prawn fritter is very well-known to both locals and out-station folks.
If you approach any locals in Kuala Kurau, they can easily help to you to locate this popular stall. Tell them to guide you to 'Si-Ya-Zi' stall. Situated by road side along Jalan Pantai of Kuala Kurau opposite LKIM (Lembaga Kemajuan Ikan Malaysia), Sin Ban Heng is featuring primarily prawn fritters made from jicama, chives bud, flour batter and prawns. Besides, she is also selling banana fritters and sweet potato fritters but prawn fritter is the best pick here! The jicama is cut into long thin strips and chives bud is prepared in the length about an inch as main ingredients. The prawns are half peeled, with heads removed and the scale still holding their tails. Using an oil dipped ladle, a thin layer of flour batter is poured to initiate the shape. Then, thin strips of jicama and cut chives bud are stuffed on and lastly she would place 3-4 prawns before pouring a layer of thin batter to cover the ingredients. Upon completion, it will then be deep-fried in a wok of steaming hot oil for about 10 minutes. Once the prawn fritter turns golden brown, it will be transferred out and drained before serving.
According to the stall operator, these prawn fritters are best to be eaten using hands to retain its aroma and crispiness! Some may prefer it to be cut into smaller pieces using kitchen knife. One of the most unique eating procedure I encountered here was to eat these prawn fritters with yellow noodles and their home made chili sauce. After you tore apart the ladle-shaped prawn fritter, roll it with yellow noodle. Then, dip into the chili sauce before putting into your mouth. I tried this prawn fritters myself and simply love it!
