Yunnan's best-known dish is 'Across the Bridge Rice Noodles' or pronounced in Mandarin as 'Guo-Qiao Mi-Xian'. Almost every established restaurant in Kunming serves this delicacy. Breakfast, lunch or even dinner, this noodles seems like a perfect dish.

Ingredients? This famous noodle is made of pre-cooked plain rice noodles (this noodles are similar to Malaysia's Asam Laksa noodles), very thin slices of chicken, pork or fish and raw vegetables.

We opted for simple side dishes
There goes our supper - Across the Bridge Noodles
Each diner is given one owns bowl of a very hot soup. One is supposed to quickly place all the ingredients into the hot soup Which has been stewed earlier with chicken or spare ribs. There is a thin layer of oil floating on top, works to maintain the warmness of the soup. Simple yet delicious!

How does the name 'Across the Bridge Rice Noodles' come about? It is said that during Qing Dynasty, there was a scholar who was preparing for his imperial examination. He retreated in an isolated island to study. Every day, his wife would bring him his meal, on the way crossing a bridge. Overtime, the wife became creative; she discovered the best way to keep the meal warm during winter. It was the top layer of oil of the chicken soup!
Among other side dishes - wild mushroom, raw meat, anchovies and beans
More for you!
Eventually, the scholar did very well in his examination and in tribute to her daily commute; the noodle is named as 'Across the Bridge Rice Noodles'.

There is also an alternative name to this noodle - Imperial Rice Noodles or called as 'Chuang-Yen Mi-Xian' by locals; originated from the same story.
The Brothers Jiang - a famous noodle house franchise in Kunming
Throughout our stay in Kunming Dali Lijiang, we sampled no less than 3 types of 'Across the Bridge Rice Noodles'. My first choice? The one from the classic shop, 'Jie Xing Yen', just across the street from Enjoying International Hotel.

Jie Xing Yen serves a very good, classic Across the Bridge Rice Noodles
Price: Ranging from RMB8 to RMB30 bowl, depends on the side dishes.
